Review of The Wilmot
Hidden away inside the 1930’s heritage Primus Hotel Sydney, you will find fine dining restaurant The Wilmot. The Wilmot is located on the ground floor of the Primus Hotel Sydney adjacent to the hotel’s impressive art deco lobby, complete with soaring ceilings and marble pillars.
The opulent space at The Wilmot manages to retain a warm feel with their use of timber flooring and a rich colour palette of navys and tans, along with brass accents, velvet banquette seating and an open kitchen.
Executive Chef Daniel Menzies (ex Bistro Moncur, Mosman) has taken over the reins in the kitchen and he’s serving up an innovative fine dining menu showcasing classic French, Asian infusion, South American and Italian cooking techniques.
The lunch and dinner menus are divided into 1, 2 or 3 courses for a set price. But, remember we did say the menu was innovative. Expect to find dishes that push the boundaries such as the Kangaroo Tartare served with capsicum jam, saltbush, cumin and parsnip crisps. Or for main, the Wagyu Oyster Blade “Cooked Two Ways” braised & seared, bone marrow, onion soubise and pickled black pearl barley. Should you be looking to share a meal, you will want to look at their ‘Two to share’ options. Anyone for a 1.2kg+ Black Onyx Tomahawk?
The food is complemented by a wine list comprising predominately of Australian and New Zealand drops with some European wines thrown in for good measure. Your sommelier will be more than happy to help you with your choices, or to match your wine with your dishes.
Espresso Martini fans simply must order one to finish their meals. Just be sure you are ‘camera ready’ when it arrives. We say no more!
We think The Wilmot is an especially good choice for a corporate lunch or dinner.
Insider tip: Head up to the hotels stunning rooftop bar for a nightcap after your meal. Oh, and if by the end of the night you have had one too many – you can always book a room at the hotel for the night!
