Review of Blanca
Blanca is the brainchild of Chefs and long time friends Tomi Bjorck’s and Samuel Cole.
Finnish Chef Tomi Bjorck is no stranger to the restaurant industry, gaining success operating 5 restaurants in Helsinki and Stockholm (BW Restaurants), not to mention his TV show appearances and the numerous cookbooks he has written. While his business partner and fellow Chef Samuel Cole, who originally hails from Woolongong, has worked alongside some of the local greats at Quay, Bentley and Glass Brasserie, not to mention also working in the kitchens of Bjork’s BW Restaurants.
They’ve come together at Blanca to create what they call a ‘blank canvas’ to share the fusion cuisine they have developed while travelling the world with us here in Australia, or rather in Bondi to be exact.
The minimalist decor of the restaurant certainly provides a blank canvas with its monochrome colour palette and clean Scandinavian lines. The food is encouraged to be the star.
Speaking of the food, the menu is a fusion of European flavours with Japanese cooking, utilising the best Australian produce. The dishes are designed to be shared and they’ve created a number of Tasting and Group Menus to make it easy for you.
The menu starts with their Snack selection, where you might like to order the Blanca black bun with crispy soft shell crab, xo mayo and spicy red cabbage. They then move on to their fresh/raw/cured menu with such options as Kingfish sashimi with horseradish creme, aojiso dressing, grilled cucumber pickle and daikon. Their mains are divided into seafood and meat/poultry dishes such as Poached red claw crayfish with burnt vanilla butter, black garlic, leeks, hazelnuts and kombu or perhaps Pork ribs and miso caramel is more your style. They also offer a selection of vegetable dishes as well as sides and desserts.
In terms of the drinks, they’re offering a bespoke cocktail menu, including Japanese Whiskeys, a wine selection featuring local and international drops as well as a range of Sakes.
We think Blanca is a great spot for groups and couples alike. We love their minimalist, relaxed approach and innovative menu.
