Review of Pei Modern
Enter yet another fine restaurant located inside a 5 star hotel. Pei Modern rose to fame in Melbourne nestled underneath the Sofitel Hotel. Incidentally, The Age Good Food Guide awarded the Melbourne Pei Modern ‘Best New Restaurant’ a few years back. In Sydney Pei Modern has found its home inside The Four Seasons Hotel.
Mark Best of the now defunct Marque restaurant is one of the men behind the concept, which serves up innovative share style plates in a relaxed, albeit trendy setting. The sexy double story layout sees a bar downstairs with restaurant seating upstairs, whilst the open kitchen remains the star.
The menu is brought to us by Head Chef Matt Germanchis. Along with their lunch and dinner menus, they offer an ‘Eat Pei Quick’ menu – perfect for a quick bite, as well as bar snacks. The menu is an interesting read, but don’t be afraid to ask your wait staff for explanations of the dishes. We think that’s the best way to make the most of the offerings. Perhaps you should start with the salt cod croquettes – crunchy bites of salty deliciousness, the burrata, kohlrabi, broadbeans and egg yolk jam hits the spot and that casarecce is to die for. Well worth the 25 minute wait.

We think Pei Modern is a worthy new addition to the Sydney dining scene. It is particularly suited to corporates and is a great pre-theatre option.
